1 cup cooked white rice
1/2 cup coconut milk
1 cup low fat yoghurt (fruit flavoured)
1 level teaspoon Naturally Sweet Xylitol
1 banana, sliced thinly
3 large passionfruit
Combine rice, coconut milk, yoghurt, banana and the pulp of two passionfruit into a bowl.
Divide into 4 serving dishes.
Top with remaining passionfruit pulp.
Refrigerate 4 hours before serving.
