Coconut Mango Bounty Slices Featured Image




For the Chocolate Layer



Line a square baking tin with parchment paper. In a mixing bowl combine shredded coconut, coconut milk, coconut oil and stevia. Transfer the mixture into the prepared baking tin, press down tightly.

Place mango chunks into a blender, add milk. Pulse until creamy and smooth, spread over the coconut layer. Place in the freezer for at least 45 minutes or until the mixture is hard.

Once firm, take out from the freezer. In a small bowl combine cacao powder, stevia syrup and coconut oil until smooth. Pour over the filling and return to the freezer for a few minutes until firm.

Allow to cool at room temperature before slicing. Serve and enjoy!
