Creamy Coconut Rice Recipe

Ingredients:

  • 1 cup cooked white rice
  • 1/2 cup coconut milk
  • 1 cup low fat yohurt (fruit flavoured)
  • 1 level teaspoon Naturally Sweet xylitol
  • 1 banana, sliced thinly
  • 3 large passionfruit

Method:

  • Combine rice, coconut milk, yoghurt, banana and the pulp of two passionfruit into a bowl.
  • Divide into 4 serving dishes.
  • Top with remaining passionfruit pulp.
  • Refrigerate 4 hours before serving.
