Creamy Coconut Rice Recipe

Ingredients:
- 1 cup cooked white rice
- 1/2 cup coconut milk
- 1 cup low fat yohurt (fruit flavoured)
- 1 level teaspoon Naturally Sweet xylitol
- 1 banana, sliced thinly
- 3 large passionfruit
Method:
- Combine rice, coconut milk, yoghurt, banana and the pulp of two passionfruit into a bowl.
- Divide into 4 serving dishes.
- Top with remaining passionfruit pulp.
- Refrigerate 4 hours before serving.
