Sugar Free Sweet and Sour Stir Fry Recipe
[caption id="attachment_34265" align="alignright" width="300"]Sweet and Sour Stir Fry Sweet and Sour Stir Fry[/caption] This Sweet and Sour Stir Fry is a delicious and a very unusual vegetarian entrée that will be appreciated by diners of all persuasions. The walnuts can be made separately days ahead and will keep well if refrigerated in an air-tight container. The nuts can also be served as a stand-alone snack – they’re kind of hard to resist! Consider making a double batch, so you can have it both ways. The stir fry is especially good when served over cooked rice.

Walnut Ingredients:

•Nonstick spray for baking sheet •4 ounces (about 2 cups) walnut halves •1 large egg whites •1 packet SweetLeaf Sweetener® Packets •1/4 teaspoon salt Mix all ingredients and spread on baking sheet lined with foil and nonstick cooking spray. Bake at 350°F for 10 to 15 minutes.

Stir-Fry Ingredients:

•1 large can pineapple chunks (separate and keep 1 cup pineapple chunks and 1 cup pineapple juice) •1/4 cup orange juice •1 tablespoon soy sauce •1 tablespoon cider vinegar •10 drops SteviaClear® Liquid Stevia Sweet Drops™ •2 tablespoon cornstarch •2 tablespoons canola oil •1 large onion, cut into chunks •2 large carrots cut diagonally into medium-thin slices •1/2 teaspoon salt •1 small green or red bell pepper, in 1-inch chunks •8-oz can sliced water chestnuts •1 medium-sized ripe tomato, cored and cut into large chunks

Method:

Heat wok over medium heat. Combine pineapple juice, orange juice, soy sauce, and SteviaClear® Liquid Stevia Sweet Drops™ in a large measuring cup or bowl. Place the cornstarch in a small bowl, and add some juice mixture, whisking until cornstarch is dissolved. Pour the cornstarch solution back into the measuring cup or bowl with the remaining juices and set aside. When the wok is hot, add the oil and onion. Cook over high heat for about a minute, then add the carrots and salt. Cook over high heat for an additional 5 minutes, stirring and/or shaking the pan frequently. Add the bell pepper, pineapple chunks, water chestnuts, and tomato, and cook for another 2 to 3 minutes, or until the bell pepper is tender. Whisk the juice mixture, scraping the bottom, then quickly pour it all into wok. Keeping the heat high, stir for another 3 to 4 minutes or until sauce thickens and forms coating around all fruit and vegetables. Stir in the prepared walnuts and serve right away. Looks very healthy indeed! As one who needs to limit sugar, I had all but given up on any recipe with Sweet and Sour and will certainly be on the lookout for the SweetLeaf Sweetener® Packets and in trying SteviaClear® Liquid Stevia Sweet Drops™
